What are Zephyrs?

Zephyrs (also called zefirs or zephirs) are a popular European confectionary that’s traditionally made by whipping berry or fruit purée with sugar and egg whites. A gelling agent is added to help them retain their shape.

In Greek mythology, the west wind is called Zephyrus and it is thought to be more light and gentle compared to the three other winds. Zephyr dessert was given its name due to its light and gentle airy consistency.

Anna makes all of her zephyrs by hand in her Kent Island, Maryland kitchen. Many of her flavors are derived from the family garden’s plentiful fruit trees and bushes.

When to Eat/Serve Zephyr

Zephyr can be eaten either as a dessert, as part of a meal, or as a snack on its own. It is often paired with a cup of hot black coffee when eaten as an afternoon snack. They are the perfect accompaniment served at teatime, or as an elegantly presented dessert to serve for girls nights, special celebrations like showers or simply to have on hand for when friends come to call.
